
A tasty and simple first course, perfect for squid lovers. Orecchiette pair perfectly with fresh small squid and broccoli, enriched by the intense flavor of anchovy fillets.






Trim the broccoli, wash it in plenty of water and finely chop it
Now separate the head of the small squids from the rest of the body and cut it finely into regular pieces
Make a soffritto by heating the oil and a crushed clove of garlic, which you will remove once browned
Dissolve the anchovy fillets in a couple of tablespoons of water and add a pinch of chili, the heads and the pieces of the small squids
Cook the orecchiette in plenty of salted water together with the broccoli florets. Drain everything and toss vigorously with the sauce prepared earlier
