
Pasta alla Norma is a typical dish of Sicilian cuisine. The name Norma refers to the opera by composer Vincenzo Bellini, who was proudly Sicilian. This dish is characterized by fried eggplants, tomato sauce, ricotta salata and fresh basil. It is a tasty and flavorful first course, perfect for a dinner based on regional Italian cuisine.






Cut the eggplants into pieces, place them in a colander and sprinkle them with a little salt
Let them drain for about half an hour
Dry them and fry them in plenty of oil
Sauté the onion and garlic in the oil and when golden, add the tomato passata, basil leaves and salt
Let the sauce reduce until well thickened
Cook the maccheroni al dente, drain them and toss with the sauce
Transfer them to a serving dish and top with the eggplants
Serve sprinkled with grated ricotta salata
