Pasta with zucchini and cooked ham is a simple and tasty dish, perfect for a quick lunch or a light dinner. The zucchini, cut into thin rounds, are sautéed in the pan together with the garlic and extra-virgin olive oil. The cooked ham, diced, is added to the zucchini to flavor the sauce. The pasta, cooked al dente, is then added to the pan and tossed with the sauce to blend all the flavors. At the end, it is served with a beaten egg and a sprinkling of salt.
Take a pan and pour in a little oil, add the chopped shallot and lightly sauté. Add a small sage leaf.
Remove the sage and add the grated zucchini and cook for 10 minutes. Towards the end of cooking add the cooked ham cut into strips and the cream.
Add a pinch of salt and the freshly drained pasta, then toss everything in the same pan used for the sauce to combine.
Serve garnished with sage or, alternatively, chopped fresh parsley.
