
Radicchio alla pancetta is a delicious side dish typical of Italian cuisine. Radicchio Di Treviso, with its slightly bitter taste, pairs perfectly with crispy pancetta and garlic sautéed in olive oil. A simple but flavorful dish.










Cut each radicchio head in half, wash them well, then put them in a pot with a very small amount of water and a pinch of salt
Drain and gently squeeze the vegetables and cut them into thin strips
In a pan put several tablespoons of oil and the peeled garlic cloves, brown them and remove them; add the pancetta cut into strips and the radicchio; try to stir gently; season with salt and pepper
Let cook for another ten minutes, transfer to a serving plate and serve immediately
