Preparation

  1. STEP 1 OF 4

    Divide the radicchio heads in half, wash them well, and then place them in a pot where you have poured a little water and added a pinch of salt.

    Drain, gently squeeze the vegetables, and cut them into strips.

    In a pan, put a few tablespoons of oil and the peeled garlic cloves, let them brown and remove them; add the pancetta cut into strips and the radicchio; try to mix gently; salt and pepper.
