Radicchio with pancetta is a delicious side dish typical of Italian cuisine. The Radicchio di Treviso, with its slightly bitter taste, pairs perfectly with crispy pancetta and garlic sautéed in olive oil. A simple yet flavorful dish.
Divide the radicchio heads in half, wash them well, and then place them in a pot where you have poured a little water and added a pinch of salt
Drain, gently squeeze the vegetables, and cut them into strips
In a pan, put a few tablespoons of oil and the peeled garlic cloves, let them brown and remove them; add the pancetta cut into strips and the radicchio; try to mix gently; salt and pepper
Let it cook for another ten minutes, transfer to the serving dish, and serve immediately
