Preparation

  1. STEP 1 OF 5

    Cook the sea bass for 20 minutes in the oven with the oil and mix the shredded meat with the yolks, the bread soaked in milk, the chopped spices, salt, and pepper.

  2. STEP 2 OF 5

    Work the ingredients for the pasta to obtain a smooth and elastic dough and let it rest for 30 minutes.

  3. STEP 3 OF 5

    Roll out the pasta very thinly with the machine and make strips 10-12 centimeters wide.

  4. STEP 4 OF 5

    Place small pieces of filling at regular intervals, fold over and press to seal, then cut out the ravioli.

  5. STEP 5 OF 5

    Sauté the mussels and crab meat with shallot browned in oil and use this to dress the ravioli.
