Clean 500 g of anchovies: gut them, remove the central bone with your hands, wash and dry them
Arrange them in layers in a bowl, drizzling each layer with lemon juice
Sprinkle with crushed garlic, cover and place in the refrigerator for 24 hours
Then drain the anchovies from their marinade, rinse them with lemon juice, place them on a plate and sprinkle with a mixture of garlic and parsley, drizzle with olive oil, season with salt and finish to taste with ground chili pepper
