Clean 500 g of anchovies, remove the entrails, take out the central bone with your hands, wash and dry them
Arrange them in layers in a bowl, drizzling each layer with lemon juice
Sprinkle them with crushed garlic and place them covered in the refrigerator for 24 hours
Then drain the anchovies from their juice, rinse them with lemon juice, place them on a plate, and sprinkle them with a mixture of garlic and parsley, drizzle with olive oil, season with salt, and finish to taste with ground chili pepper
