    Preparation

      Soak the beans overnight and then cook them for over an hour in water with a medium onion, two sage leaves, a sprig of tarragon, and a bunch of chervil

      Clean the red mullet, wash them, dry them, flour them, and quickly brown them in a pan with three tablespoons of heated oil

    3. STEP 3 OF 7

      In a bowl, whisk together three tablespoons of oil with one of vinegar, add the finely chopped spring onion, a pinch of salt, and pepper

      Pour it over the drained beans

      Mix gently

      Arrange the red mullet with the beans around them on a warm serving dish
