Rice and beans is a delicious dish of rice with borlotti beans, pork snout, onions, carrots, celery, and spices. It is a warm and hearty dish, perfect for the colder months.
Stew onions, carrots, and celery in 3 tablespoons of oil, add the pork snout, the beans already soaked overnight, and plenty of water, cover and cook over low heat for about 3 hours
Remove the pork snout, strain the vegetables and 1/3 of the beans, put back on the heat, add the rice and cook
