Rice fritters alla Pavese are a delicious, crispy appetizer, perfect to serve during an aperitivo or as a light dish. Their origin goes back to the culinary tradition of Pavia, a city in northern Italy. These fritters are made with rice, milk, eggs and a selection of spices such as cinnamon and nutmeg. They are then fried until they reach an irresistible crispiness. Enjoy them while still warm, dusted with powdered sugar and accompanied by fresh strawberries.
Combine the milk, rice, vanilla and a pinch of salt in a saucepan
Bring to a boil and cook over low heat until the rice has absorbed the liquid
Remove from the heat and discard the vanilla bean
Dissolve the yeast in a little lukewarm water, mix it into the rice, cover and let rest for 2 hours
Peel and chop the pistachios
Beat the eggs and mix them into the rice with the pistachios, the sweetener, the flour, one teaspoon of cinnamon and two pinches of nutmeg
Cover and let rise for 30 minutes
Blend the strawberries with the sugar until you obtain a smooth sauce
Fry spoonfuls of the rice mixture
Drain the fritters on paper towels
Dust with powdered sugar and serve still hot with the strawberry sauce on the side
