Risi e Bisi is a traditional dish from Venetian cuisine that takes its name from the Venetian dialect term "bisi," meaning peas. It is a very creamy risotto made with very tender peas and Vialone Nano rice, enriched with a broth flavored with snow peas, onion, carrot, and anise seeds. To add even more flavor, a sauté is made with shallots, diced pancetta, and olive oil, which is added to the risotto during cooking. The result is a tasty first course with a unique flavor.
Cook the peas in unsalted water
Make the broth with the indicated ingredients, 200 cl of water, pass the broth through a food mill and keep warm
Make the sauté with the indicated ingredients, brown the rice in it, gradually adding the purée
Finally, add peas and pepper and serve
