Preparation

  1. STEP 1 OF 5

    Clean and singe the chicken, leaving it whole

  2. STEP 2 OF 5

    Then pour 1/2 teaspoon of salt inside, a dash of pepper, and add a handful of green olives rinsed under running water and 1 tablespoon of butter

  3. STEP 3 OF 5

    Tie it together with two sprigs of rosemary, with the legs tightly bound, and place it in a baking dish with 3 tablespoons of oil

  4. STEP 4 OF 5

    Place it in a preheated oven and leave it for an hour until the skin is crispy, turning it a couple of times and basting it halfway through cooking with white wine

  5. STEP 5 OF 5

    Serve it cut into pieces surrounded by the cooked olives that you will have retrieved by breaking up the chicken
