    Score the rind in both directions, salt the meat and pepper it, adding the cloves

    Place it in a pan with the margarine that you have previously melted and bake

    Cut the savoy cabbage and onion, add them to the remaining spices and combine with the meat

  4. STEP 4 OF 6

    Cook for 2 hours, occasionally basting the meat with its juices

  5. STEP 5 OF 6

    10 minutes before the end of cooking, baste the rind with salted water; remove the meat from the pan and strain the juices, thickening them over the fire with a spoonful of flour

  6. STEP 6 OF 6

    The sauce should be served separately
