Wash and peel the celery and carrots then cut them into strips of about 3 cm
Cut the pancetta into strips as well
In each slice of beef, place a piece of celery, carrot, and pancetta; roll and secure with a toothpick
Heat some olive oil in a pan and place the rolls in it, adding the chopped onion, dry white wine, and a bit of flour
Stir over high heat and add three peeled, skinned, and crushed tomatoes, salt, and pepper
Cook everything for 15-20 minutes
