Rustic Bites are a delicious appetizer typical of Italian cuisine. Made with frozen puff pastry, chicken livers, dried plums (prunes) and a mix of aromatic herbs, these bites are irresistible. Coarsely chop the chicken livers and brown them in a little butter with some sage and marjoram leaves; sprinkle with two tablespoons of flour and mix.
Sprinkle with a little Marsala and let it evaporate.
Pour in the cream, season with salt and pepper.
Let it simmer for about ten minutes to develop the flavors.
Meanwhile roll out the thawed puff pastry and cut eighteen squares.
Place the mixture in the center of each square together with a pitted dried plum.
Fold and form small bites, sealing the edges well with beaten egg yolk.
Bake at 200°C for about twenty minutes until golden, then serve.
