Clean all the vegetables
Sauté the leeks and onion in olive oil with the diced potatoes and the peeled and crumbled sausage
After 15 minutes add the broth and simmer for 30 minutes
Cook the spinach separately, chop it and add it to the soup
After a few minutes of boiling add the rice and cook it until done
