  • Fresh corn cobs cut into 3 parts3
  • Peeled green plantains cut into pieces2
  • Peeled red bananas (hartones pintones) cut into pieces2
  • Peeled cassava (yuca) tubers cut into pieces2
  • Peeled potatoes cut in half6
  • Fresh chopped coriander (cilantro)3tablespoons

Preparation

  1. STEP 1 OF 7

    Place the cleaned, washed, and chopped chicken pieces to marinate for 2 hours with half of the onions and tomatoes

  2. STEP 2 OF 7

    Sauté the remaining half in a clay pot with margarine and chopped garlic

  3. STEP 3 OF 7

    After about 5 minutes, when the sautéed mixture has colored, pour in the water and bring to a boil

    At this point, add the meat, corn cobs, and plantains

  5. STEP 5 OF 7

    When the meat starts to become tender, after about 45 minutes, remove the corn cobs and set them aside

  6. STEP 6 OF 7

    Now add the red bananas, cassava, and potatoes to the cooking broth, and adjust with salt and pepper

  7. STEP 7 OF 7

    Cover and continue cooking until all ingredients are well cooked; at this point, add the corn kernels to the broth and sprinkle with fresh coriander before serving
