Sancocho De Gallina is a tasty traditional Colombian soup made with free-range hen, ripe tomatoes, plantain bananas, cassava tubers, potatoes and fresh cilantro. It is a rich and hearty dish, perfect for warming the soul on cold winter days.
Place the cleaned, washed hen cut into pieces and let it marinate for 2 hours with half of the onions and tomatoes
Sauté the remaining half in a clay pot together with the margarine and the chopped garlic
After about 5 minutes, when the sautéed mixture has taken on color, pour in the water and bring to a boil
At this point add the meat, the corn cobs and the plantains
When the meat begins to be cooked, after about 45 minutes, remove the corn cobs and set them aside
Now add to the cooking broth the red bananas, the cassava and the potatoes; season with salt and pepper
Cover and continue cooking until all the ingredients are well cooked. At this point cut the corn kernels from the cobs into the broth and sprinkle with fresh cilantro before serving
