
Sautéed Broccoli Rabe is a typical side dish from Apulian cuisine. It is simple to prepare and offers a unique and aromatic flavor. This dish is perfect to accompany grilled meat or fish.









Cut and remove the tougher stems and leaves, rinse them in plenty of water several times and blanch them
Drain them al dente and put them in a large non-stick pan in which you have previously heated the oil and browned the garlic
Stir vigorously and add the salt, chili pepper, and anchovy fillets
Let it cook for a scant 10 minutes, covering the pan with a lid or aluminum foil
Before removing from heat, make sure they are not watery; if they are, raise the heat and uncover them
Let them cool slightly and serve
