In a pan heat a little oil, add the chopped onion and let it soften for 5 minutes
Add the tomatoes cut into pieces and deseeded
Cook for another 5 minutes
Add the peppers, after removing seeds and membranes, roughly chopped into pieces, and cook for another 10 minutes
Add the pitted olives, salt, pepper, vinegar and sugar
Cook for another 10 minutes
Toast the bread and top it with the mixture
