Whip the butter after keeping it at room temperature
Add an egg yolk, salt, and crushed crackers in the right amount to obtain a soft mixture
Take a 22 cm tart mold and spread the mixture on the bottom and the edge
Chop the spinach and also place it in the mold
Add the grated pecorino, diced provolone, and the sausage cut into slices
Beat the eggs with salt and pepper
Add the grated Grana Padano and the cream
Pour the mixture over the spinach and put it in a hot oven at 180 degrees for about 20 minutes
