Wash the scampi and boil them in water together with the salt, the aromatic bouquet and the peppercorns.
When they are cooked, shell them and place the tails in a fairly wide bowl, which you will keep warm in a bain-marie.
Meanwhile prepare the sauce in a small bowl by whisking with a fork the oil, the finely chopped parsley and a pinch of salt.
Arrange the scampi on a warmed serving plate, pour the sauce over them and serve.
