Preparation

Heat the salsa de chile verde in a pan over moderate heat

Pour in the eggs and cook over low heat without stirring for 1 and 1/2 minutes or until the mixture begins to set at the bottom

Lift the edges of the omelet and fold them with a spatula so that the still liquid mixture on the surface comes into contact with the pan and thickens

Continue to lift and fold the edges of the omelet until the entire omelet is set but still soft

Serve hot with sour cream on the side
