Heat the salsa de chile verde in a pan over medium heat
Pour in the eggs and cook over low heat without stirring for 1 1/2 minutes or until the mixture begins to set on the bottom
Lift the edges of the omelet and fold them with a spatula so that the still-liquid mixture on the surface comes into contact with the pan and sets
Continue lifting and folding the edges of the omelet until the entire omelet has set but is still soft
Serve hot, serving the sour cream on the side
