
Scrambled eggs with champignons are a tasty and quick side dish to prepare. The creamy combination of scrambled eggs with champignons, enriched by the flavor of smoked bacon and fresh parsley, will make this dish irresistible. Ideal to serve with meat, fish, or to enjoy on its own.



Clean the champignons, wash them well, and cut them into quarters or very thin slices.
Drizzle them with a little lemon juice so they don't darken.
Meanwhile, prepare the bacon: cut it into fairly thin cubes and melt it in a large skillet over medium heat.
Alternatively, instead of bacon, heat the butter.
Add the mushrooms and cook them without making them too mushy.
In the meantime, gently beat the eggs with water, salt, and pepper using a fork and pour everything over the mushrooms.
Cook over medium heat for 4-5 minutes, stirring occasionally with a spatula and tasting to check cooking.
Before serving, sprinkle with parsley and adjust the salt.
