Scrambled eggs with champignon mushrooms are a tasty and quick side dish to prepare. Clean the champignon mushrooms, wash them well, and cut them into quarters or into very thin slices
Drizzle them with a little lemon juice so they don't turn dark
Meanwhile prepare the bacon: cut it into fairly thin cubes and cook it in a large pan over medium heat
Alternatively, instead of bacon, heat the butter
Add the mushrooms and cook them without letting them become too soft
Meanwhile gently beat the eggs with the water, salt and pepper using a fork, and pour the mixture over the mushrooms
Cook over medium heat for 4-5 minutes, occasionally stirring with a spatula, and taste to check doneness
Before serving, sprinkle with parsley and adjust the salt
