Grate or cut the Fontina into thin slices
In a pan melt the butter, break the eggs into it and scramble them, mixing with the tines of a fork
Add the cheese, a pinch of salt and pepper
Continue to stir so that the mixture does not stick to the bottom of the pan
Remove from the heat when the mixture is thickly creamy, quickly stir in one whole raw egg and serve with toasted bread
