Pour the eggs over the sausage and cook on low heat without stirring until the eggs begin to set on the bottom and edges of the pan
Lift and fold the edges of the omelet with a spatula so that the still liquid mixture on the surface comes into contact with the pan and thickens
Continue lifting and folding the edges of the omelet for 2-3 minutes
Then incorporate the tomatoes into the mixture and continue to lift and fold for another 2-3 minutes or until the omelet is set but still soft
Serve immediately
