Preparation

  1. STEP 1 OF 4

    Clean the fish and fill it with a mixture of onion and wild fennel and 3 tablespoons of olive oil

  2. STEP 2 OF 4

    Pour 1000 g of salt into a baking dish, place the fish on it, and cover with the remaining salt

  3. STEP 3 OF 4

    Bake in the oven at 180 degrees for 50 minutes: the salt should form a hard crust that you will break once cooking is complete

  4. STEP 4 OF 4

    Gently remove the fish, season it with oil, and serve
