
Orata in Salt Crust is a traditional recipe of Mediterranean cuisine. This dish is characterized by its simplicity, which allows the flavor of the fish to be enhanced. The orata is cooked whole, wrapped in a bed of coarse unrefined salt, which gives the fish a unique delicacy. The salt creates an external crust that keeps the fish tender and juicy inside.





Clean the fish and fill it with a chopped mixture of onion and wild fennel and 3 tablespoons of olive oil
Pour 1000 g of salt into a baking dish, place the fish on it and cover with the remaining salt
Put in the oven at 180°C for 50 minutes: the salt must form a hard crust which you will break once cooking is finished
Carefully remove the fish, season with olive oil and serve
