
Semolina minestrone is a rich and hearty soup typical of Italian cuisine. It is made with pancetta, onion, garlic, aromatics, minestrone vegetables, tomato purée, broth, salt, pepper and semolina. It is an ideal dish for warming up during the colder months and can be customized according to the seasonal vegetables available.





Sauté the vegetables in a mixture of pancetta, onion, garlic and aromatics
Add the tomato purée, broth, salt and pepper and cook for 40 minutes
Then sprinkle in the semolina and cook for about 10 more minutes
