Shashlik is a traditional dish of Russian cuisine, also common in many other cuisines of Eastern Europe and Central Asia. It consists of skewered meat marinated and cooked on the grill. In this recipe we use boneless lamb pieces marinated in a flavorful, juicy sauce. The result is a tasty and savory dish, perfect for a summer barbecue.

Marinate 700 g of boneless lamb cut into large pieces with one chopped onion, one teaspoon of crushed coriander seeds, two tablespoons of red wine vinegar, one tablespoon of olive oil, salt and pepper for 18 hours.
Then remove the meat from the marinade, drain it and thread it onto the skewers.
Cook over a wood fire, basting with the marinade.
Serve with green salad and tomatoes.
