A tantalizing and very tasty appetizer, easy to prepare. The shrimp are marinated with lime juice, oil, salt, and pepper, and served with a voluptuous and enveloping sauce made with avocado, lime juice, and creamy spreadable cheese.
Rinse the shrimp under cold running water and remove the shell and vein. Set aside 4 with the head for the final decoration.
Blanch the shrimp in boiling water for a few minutes, then drain them.
Season the shrimp with the juice of 1 lime, a splash of oil, and a grind of pepper. Let marinate for 30 minutes.
Cut the avocados, remove the pits, and collect the pulp in a bowl.
Drizzle the pulp with the juice of the second lime and season with salt, oil, and pepper. Continue to mix.
Add the creamy spreadable cheese and incorporate it perfectly.
Distribute the marinated shrimp into 4 glasses, keeping aside those with the heads.
Collect the avocado sauce in a piping bag and distribute it over the shrimp, forming peaks.
Finish with the last shrimp, a few pomegranate seeds, a slice of lime, and a sprig of wild fennel.
Bring to the table and serve.
