    Preparation

      Empty the fish by removing the head and bones carefully to avoid breaking them

      Wash and dry them

      Pit the washed olives and squeeze the capers, peel the tomatoes, remove the seeds, and chop everything together with two cloves of garlic and a tablespoon of parsley

      Mix the chopped ingredients with the pecorino and stuff the sardines, which you will place in an oil-greased baking dish

      Add salt, pepper, and oil, then bake them in a hot oven for about 20 minutes
