Empty the fish by carefully removing the head and bones without breaking them
Wash and dry them
Pit the drained olives, squeeze the capers, peel the tomatoes, remove the seeds, and chop everything together with two cloves of garlic and a tablespoon of parsley
Mix the chopped mixture with the grated pecorino and stuff the sardines which you will place in a baking dish greased with oil
Add salt, pepper, and oil, then cook them in a hot oven for about 20 minutes
Serve the stuffed sardines in the cooking dish garnished with sprigs of parsley and lemon juice
