Place the salmon fillet in a baking dish, season with salt and pepper, and drizzle with the juice of one and a half lemons
Sprinkle with half of the chopped fennel and the zest of half a lemon cut into thin strips
Cover the preparation with kitchen film and place the dish in the refrigerator until the next day
Remove the dish from the refrigerator one hour before serving
Drain the salmon well from the marinade, place it on a baking sheet lined with oiled parchment paper, and bake at 250 degrees for 5 minutes
Remove the salmon from the oven, slice it thinly, and arrange it on a serving platter
Sprinkle with the chopped fennel you set aside and serve with sour cream
