
Canederli Altoatesini are a traditional dish from the Alto Adige region, one of the northernmost regions of Italy. They are tasty bread dumplings prepared with simple ingredients such as stale bread crumbs, flour, eggs, milk and spices. They are then cooked in hot meat broth and served as a warm starter or first course.







Finely crumble the stale bread crumbs and combine them with the softened butter; while mixing, add the eggs, the flour, a handful of chopped parsley, nutmeg, salt and lukewarm milk.
Let rest for 30 minutes.
Moisten your hands and form balls about 5 cm in diameter with the mixture.
Bring the broth to a boil, gently place the canederli into it and cook them for 20 minutes.
