South Tyrolean canederli are a traditional dish from the Alto Adige region, one of the northernmost regions of Italy. They are tasty bread dumplings made with simple ingredients like bread crumbs, flour, eggs, milk, and spices. They are then cooked in hot meat broth and served as a warm appetizer or first course.
Finely crumble the bread crumbs and mix them with softened butter; while continuously stirring, add the eggs, flour, a handful of parsley, nutmeg, salt, and warm milk
Let it rest for 30 minutes
Moisten your hands and form the mixture into balls about 5 cm in diameter
Bring the broth to a boil, gently add the canederli, and cook them for 20 minutes
