Soak the farro and the beans separately overnight
In a pot sauté the chopped onion, carrot, celery and garlic in two tablespoons of oil
Splash with white wine and let it evaporate; add the tomatoes and two sage leaves and cook for a quarter of an hour, then add the beans, one liter of water and cook for one hour
Blend everything
Pour into a pot, bring to a boil, season with salt and pepper; add the farro and simmer for an hour and a half
Finish with a drizzle of oil
