Soak the spelt and beans separately overnight
In a pot, sauté chopped onion, carrot, celery, and garlic in two tablespoons of oil
Sprinkle with wine, let it evaporate, add tomatoes and two sage leaves, cook for fifteen minutes, then add the beans, a liter of water, and cook for an hour
Blend everything
Pour into a pot, bring to a boil, adjust salt and pepper; add the spelt and simmer for an hour and a half
Season with a drizzle of oil
