Spinach casserole is a tasty and versatile side dish. Frozen spinach is cooked and combined with a mix of stale bread crumbs, grated Emmenthal cheese, eggs, and cream. The whole is enriched with a touch of butter and olive oil and baked until golden. This dish is perfect to accompany meats and fish or can also be served as a main course.
Thaw the spinach in boiling water, squeeze them and season in a saucepan for 5 minutes with 20 g
of butter and a tablespoon of oil
Place them in a bowl, add the cheese, crumbled bread, and 2 tablespoons of cream
Mix, add 1 egg and 1 yolk
Salt and blend
Pour the mixture into a buttered mold, cover and cook for 45 minutes in a bain-marie
