Trim and wash the spinach thoroughly
Boil them in salted water acidified with the lemon cut into slices
Remove the lemon, drain and squeeze the greens and keep them warm on the serving plate
Prepare the sauce
In a saucepan put the chopped shallots, the wine and a small cup of water
Bring to a boil over medium heat, reduce the heat and let the liquid reduce by half
Remove from the heat, salt and pepper, let cool slightly, incorporate the softened butter into the mixture, stir and return to the heat
Using a whisk, continue to beat until the sauce reaches a slightly thickened consistency
Add some small thyme leaves
Sprinkle the spinach with grated cheese and cover them with the white sauce
