Preparation
- STEP 1 OF 4
Mix 1 cup of thick béchamel with 2 beaten egg yolks and 1 cup of chopped cooked spinach; season with nutmeg, pepper, and salt

Fold in 1/2 cup of grated cheese and 2 stiffly beaten egg whites
- STEP 3 OF 4
Pour everything completely into the pan and let it steam for 35-45 minutes

The soufflé is done when a knife inserted in the center comes out clean
