First, prepare the spleen: pound it, cut it across and shred it
Work the butter with the egg yolks and add the spleen with the chopped parsley, the marjoram, a little lemon zest, salt and pepper
Whip the egg whites until stiff and fold them into the mixture, then spread it on the slices of bread, covering each with a second slice so they stick together
Then fry these 'sandwiches' in hot extra-virgin olive oil, drain them and when they are cold cut them into sticks
Finally, serve the bread sticks in hot, previously prepared meat broth, sprinkled with chives
