The pearl onion and cheese frittata is a delicious side dish typical of Italian cuisine. Made with eggs, pearl onions, grated Parmigiano cheese and flavored with sugar and broth, this frittata is an explosion of flavors. Served hot or cold, the pearl onion and cheese frittata pairs perfectly with meat and fish.
Clean the pearl onions and melt the butter in a pan
When it's hot, add the pearl onions, seasoning with salt and pepper
Sprinkle the pearl onions with sugar and let them brown over high heat
Cover and cook over low heat, turning occasionally and moistening from time to time with hot broth
Beat the eggs in a bowl with a pinch of salt and pepper
While continuing to beat, incorporate the cheese
When the pearl onions are cooked and glazed, add them to the egg and cheese mixture, mixing
Put the oil in a not-too-wide pan (the frittata should be thick and the pearl onions should be covered by the egg mixture) and cook the frittata, turning it at least once
For an elegant and refined presentation you can cut the frittata with a heart-shaped cutter into 4 little hearts and place them on a bed of fresh salad garnished with radishes
