Scrape the carrot, peel the onion and put them in a saucepan with the celery, the fennel fronds and a teaspoon of salt
Cover with water and bring to a boil
Add the squid and cook for 45 minutes
Drain the squid and let cool
Meanwhile trim the fennel and cut it into thin slices
Wash and dry the lettuce
Distribute it among four shallow plates
Slice the squid thinly
Place them in the bowl with the fennel
Dress with oil, lemon juice and salt
