Stewed salt cod with potatoes is a dish from the Italian tradition, particularly common in coastal regions. It is a very flavorful and tasty main course, perfect for the colder months of the year. The salt cod is accompanied by a delicious tomato sauce enriched with Taggiasca olives, capers and red onion. The potatoes add body and make the dish even more substantial. The use of bay leaves gives the salt cod a special aroma and completes its preparation.
Sweat the onion in a saucepan, add the tomato passata, capers, olives, bay leaf, oil and season with salt.
Cut the potatoes into small cubes, add them to the sauce and cook over low heat.
