Stuffed cherry tomatoes are a delicious side dish made from cherry tomatoes on the vine filled with breadcrumbs, grated Parmigiano cheese, mozzarella and flavored with garlic and parsley. A simple and tasty dish, perfect to accompany meat or fish.
Wash the cherry tomatoes, remove a small cap from each and carefully hollow them out
Put the breadcrumbs on a plate, add the grated Parmigiano cheese, the garlic cloves finely chopped, a handful of chopped parsley, 3 tablespoons of oil and salt
Mix and distribute the mixture inside the cherry tomatoes and arrange them in a baking dish lightly greased with oil that fits them properly
Cut the mozzarella into dice and place one on each cherry tomato
Bake at 2000 degrees for about 10 minutes
