Stuffed Fritters are delicious fried dough balls filled with cooked ham and mozzarella (or ricotta), perfect as a hot appetizer. They are crispy on the outside and soft on the inside.
Place the flour in a mound on a marble surface, dissolve the yeast in warm water, and work the flour by gradually adding the water with the yeast and salt.
When it becomes a compact mass, make small balls of dough and roll them out with a rolling pin to form circles 5/6 cm in diameter and 2 mm thick.
Place the filling on one side of the circle and cover it with the other side, making sure to match the edges and press them so the filling doesn't escape.
Place all the fritters on a cloth in a warm place for about 30 minutes.
At this point, heat two fingers of oil in a wide, shallow pan. When it reaches maximum temperature, start immersing the fritters, browning them on both sides, being careful not to burn them.
Then let them dry on absorbent paper and serve hot.
