Cut the tops off the grapefruits and hollow them out with a spoon, removing the skin from the segments and chopping the pulp
Clean the celery, wash it and cut it into cubes
Julienne the carrots
Combine the vegetables with the grapefruit pulp along with the peeled and diced kiwis
Mix well and let rest
Mix mayonnaise to taste with yogurt and adjust with salt
Combine the sauce with the vegetables and fruit and fill the hollowed grapefruits
Serve chilled as a light appetizer
