Tie the meat and insert sage and rosemary under the string
Brown in oil and butter, season with salt and pepper, and sprinkle with a little brandy, let it evaporate and add 1/2 glass of water
Cook covered for 1 and a half hours
Remove the string and cut the meat into slices without cutting all the way through
Insert the fontina between each slice and place in the oven at 180 degrees until melted
