In 500 g of lightly salted water, add a skinless chicken thigh, a piece of celery, 1 small onion, and 1 well-cleaned and washed carrot. Bring to a boil and cook for over an hour.
Strain the broth, separating the chicken meat and vegetables.
Cook the stelline pasta in the chicken broth and drain directly onto the plate.
Separately, mix the veal with a little cooking broth, add the fresh cheese while stirring, pour over the stelline, and finish with extra virgin olive oil.
