Surprise polenta is a traditional Italian dish from the Lombardy region. It consists of a soft, stringy polenta, surprisingly filled with a creamy cheese core. Ideal to enjoy as a winter first course, this delicacy will win over even the most demanding palates.
Prepare a fairly soft polenta
Cut the mozzarella and the Emmental into very small cubes
Beat the eggs with the grated Parmigiano Reggiano, add the diced cheeses and mix thoroughly
Pour the mixture into a buttered baking dish sprinkled with breadcrumbs and distribute pats of butter over the surface
Bake in the oven at 180°C for about 30 minutes
