Clean the cabbage by removing the outer leaves and part of the core
Separate the leaves and wash them
Cut into strips and place in a bowl, salting and covering with boiling water, leaving until the water cools down
Then drain and squeeze out excess water
In a saucepan, sauté the peeled and chopped onion with the also chopped pancetta, 50 g of butter, and 5 tablespoons of oil
When everything is golden, add the cabbage and 1 teaspoon of sugar, letting it flavor for 15 minutes
