Prepare the marinade

Mix the vinegar with the soy sauce, oil, chili pepper, sugar, and crushed garlic in a bowl, then place the turkey in it and let it marinate for 12 hours in a cool place, covered with plastic wrap, making sure to turn and baste it occasionally

Dry it well with paper towels, tie it with kitchen string, and brown it evenly over high heat in a saucepan with hot oil

Then lower the heat, add salt and pepper, and cook for 1 hour and 15 minutes, basting occasionally with the marinade liquid (if not enough, use broth)
