Wash the bell peppers, remove the seeds and cut them into small dice
Peel, remove the seeds and dice the tomatoes
Finely chop the onions
Moisten the couscous semolina with a little water poured gradually, then drain the semolina and add oil until the grains remain well separated
Mix the grains after letting them cool, then add the tomatoes, onions, bell peppers, lemon juice, parsley and mint
Salt and pepper to taste
Garnish with a few mint leaves and serve
