Tagliatelle alla Bolognese is one of the most famous and beloved dishes of Italian culinary tradition. Cook the pasta in salted water.
Chop the bacon, onion, carrot, and celery, place them in a pan with the butter and minced beef, and brown everything.
Then add the cloves and let it cook for 20 minutes.
When the meat has taken on some color, pour in the red wine and let it evaporate. Add the tomato, salt, and pepper.
Let it cook for another hour.
Drain the pasta and after dressing it with the sauce, plate it and sprinkle with Parmesan, to taste.
