
Tagliatelle alla Bolognese are one of the most famous and loved dishes of the Italian culinary tradition. The original recipe calls for ground beef, tomato sauce and vegetables such as onion, carrot and celery. Fresh tagliatelle are the ideal choice for this preparation, as they pair perfectly with the dense and rich texture of the sauce.









Cook the pasta in salted water.
Chop the pancetta, onion, carrot and celery; put them in a pan with the butter and the ground beef and brown everything.
Then add the cloves and let cook for 20 minutes.
When the meat has taken on some color, pour in the red wine and let it evaporate. Add the tomato sauce, salt and pepper.
Let it cook for another hour.
Drain the pasta and, after dressing it with the sauce, plate it and sprinkle with Parmigiano to taste.
