Tagliatelle alla Carrettiera are a dish from the Apulian tradition. Made with tagliatelle-type pasta, dried mushrooms, olive oil, garlic, tuna belly, chili pepper and tomato, it is a very tasty recipe.
Soak the dried mushrooms in warm water to rehydrate them, then drain them using a fine mesh strainer.
Bring a pot of water to a boil for cooking the pasta.
In a pan heat the oil, add the garlic sliced into not-too-small pieces and let it brown; then add the mushrooms, followed by the tuna, the chili pepper and the tomato, and season with salt.
Let the sauce reduce well.
Drain the pasta and add it to the sauce, serving everything piping hot.
